Dum method: the marinated meat or veg with rice are placed inside the cooking pot with fresh herbs & pound garam masala and is tightly sealed with a chapati dough and cooked by not letting the steam come out. By doing so the biryani gets cooked well and also keeps the flavours intact- therefore, it's called 'dum cooking'. (With raita and a papadum).
