Jose and Aidee have worked for more than 10 years in the food industry, proud to be Mexicans, they wanted to share the traditional tacos acorazados, this is how the idea of Blue Corn Tacos arises.
What a great breakfast! The burrito tortilla was fresh, inside was plenty of shredded machaca beef, egg, and diced potatoes. The Horchata was also delicious and not too sweet. There's no cilantro in the Machaca Breakfast Burrito for those of you that dislike it, and I didn't need any salsa because it was perfectly seasoned as prepared.

we normally do tacos from a truck for that real street taco feel. These guys are hands down amazing. I love their specialty like the Ensalada de Nopal Tacos speciality Beer Batter Fish or Shrimp Tacos ! this is our new go to for ordering Mexican food for delivery these days.

Really delicious tacos. Fresh flavor and tasty combos. The Chile Relleno Tacos were very good. Might have preferred beans in the tacos over rice, but overall super yummy. And don't sleep on the Churros!! The best churros in Longmont!
