This carrot cake is AMAZING!!! Not too sweet, and not lacking anything at all!!! Icing is fluffy and delicious. And the walnuts are EVERTHING!!!

Whoever changed the Zucchin Medallions were wrong. They are too thick and too breaded and not even crispy enough to be considered fried. Make them the way they were made previously.
