I have to mention everything I noticed because I've had bánh mì that misses in these departments: The bread is soft inside and lightly toasted, so it's not tough to bite into or cut the inside of your mouth. The pork belly is ALWAYS crunchy. Jalapeños are cut lengthwise for even spice distribution. They have ALL the condiments... they do not skimp - the soy garlic sauce compliments the pork, and they slathered on that pâté like they're making it for their own family.
