Coosh's Bayou Rouge is owned by Coosh Willis and his wife Margaret. Willis grew up in Gonzales, Louisiana's Jambalaya Capital. Long-time Tallahassee locals may recall The Mill, a beloved restaurant.
I asked for no shrimp in my Shrimp & Grits- crazy right? I don't even hate shrimp, I just like their sausage more. The store replaced my shrimp with extra sausage, and gave me a truly wonderful meal. So outstanding.

Forgot my salad, but they accommodated my weird request of not having shrimp in the Shrimp & Grits. So I'm happy. Great food as usual!

I'm upset because I know they can and have done custom orders before, but ignored it this time. Honestly the Shrimp & Grits is mid if they put shrimp in it. If not? it's great.
