So, after seeing how many times i have ordered different things from Pistachio, i found that i need to start eating LUNCH here pretty soon as i have ordered nearly everything breakfast related from this STELLAR Business,
Today it was the Eiffel Benedict and as usual, i was extremely pleased with my choice. The eggs cooked to perfection paired with the hollandaise, ham and mushrooms on a toasted piece of croissant. made this breakfast above average. Add that little bit of mixed greens and the potatoes and good heavens why would i want to dine anywhere else but PISTACHIOS!
Highly recommended, i have been there IRL (in real life) and the service there is always first class - but either way, delivered or hot and fresh in the restaurant, this is one cafe that i can really say is somewhere you do not want to miss.

We love Pistachios but sometimes they let us down. We will be back, but this is disappointing. $7 for a Cinnamon Roll that was small (lighter for scale in pick) but worse, dry and stale. Please either lower the price or check the product first. Otherwise, yummy as usual!

We liked the breakfast burritos, but the biscuits and gravy are overpriced and leave much to be desired - the biscuits were not fully cooked, there was not enough gravy, and the potatoes were dry.

Pistachio's never lets me down. I have dined in, ordered through doordash but have yet to use their drive-thru! Everything about this place is top notch - service, food and they have a bakery with some of the best choices in Longmont. The Chorizo Cheddar omelet comes smothered in green chile and you can't help but rescue that poor little omelet. My personal favorite of theirs has got to be the PANCAKES though.

Pistachio's cooked my order to perfection! Their Chorizo Spinach Waffle are the softest most delicious waffles I've ever had, and their Double Chocolate Pancakes are always a favorite. Highly recommend!
