As a 100% creole, you MUST put Zatarins gumbo FILE in your gumbo! The flavor is lacking because of this. Pete's Louisiana sausage (Los Angeles based) is a perfect spicy sausage for authentic gumbo! Again, without ZATARINS GUMBO FILE, you don't have real gumbo flavor
