Happy Day cakes were the vanilla cake our grandmother and great grandmother made when she wanted to make us happy. It worked. Top them with the buttercream of your choice.
Red velvet cake is great with cream cheese frosting or our vanilla buttercream. Lots of people like it topped with the chocolate buttercream too. But you can top it with any buttercream flavor that makes you happy.
Our carrot cake is made with brown butter, currants and golden raisins. We love it with cream cheese frosting but it's great with the salted caramel buttercream too. It's up to you though, top it with the buttercream of your choice.
Rich banana flavor is especially great with the coffee buttercream but it's also delicious with chocolate, vanilla and salted caramel.
I would happily serve this chocolate cake to anybody as a regular chocolate cake, so it's certifiably Bonkers. For bonus points, does not contain animal products, and so no dairy or eggs for those who are allergic.
