The special omelette, I chose carnitas, is phenomenal with a surprising amount of grilled veggies and tons of cheese. It's very balanced not too much of anything and it felt healthy due to the crisp green peppers inside and the freshly prepared pico and shredded lettuce on top. The carnitas is tender and well seasoned but not a huge amount inside the omelette which I liked. The jalapeños weren't overly added which also added to the balance of flavors. I wolfed this down and I'm real picky, just a great omelette with fluffy rice and refried beans that arent overly processed or salty. The verde chilaquiles had perfect sunny side up eggs with tangy spicy green sauce. The warm flour tortillas served with both meals tasted homemade. My hubby stated that he'd order the special omelette next time though but I really like the spicy salsa verde on his dish. I also prefer the salsa verde to the red hot sauce although not as spicy as the red it's got perfect tangy flavor so be sure to request the green hot sauce. We both loved the creminess of the sour cream given on the side as well. I'm from San Diego and I'm always afraid to try new Mexican food restaurants but I highly recommend this Castañeda's and the special omelette is a must order if you want a good healthy egg breakfast YUMMY!
