Kung pao is the most famous style of szechuan cooking. It combines ingredients such as peanuts, hot peppercom, garlic, scallions, dark soy sauce, sugar and vinegar. As a result, these items sautéed with meat or seafood and vegetables, a combination of sweet, sour and spicy can be enjoyed in same dish.
Yu hsiang is another famous Chinese style cooking. The trick of this method is to mix sugar and vinegar delicately with garlic and chili sauce to create a unique flavor. Garlic style yu hsiang are sautéed with water chestnuts, green and Red Peppers, mushrooms, wood ear: wild exotic mushrooms, and pea pods. All ingredients are in the following dishes with the exception of yu hsiang broccoli.
