The tandoor is a tall, cylindrical clay oven fired by charcoal. The temperature at the bottom is maintained at 800 degrees Fahrenheit. One has to be very skillful to work on the tandoor in order to achieve the processes of baking, roasting and grilling simultaneously. All tandoori dishes are served with naan (bread) instead of rice.
