Japanese A5 Wagyu is characterized by intense richness due to its intense intramuscular marbling (fat). Customers describe eating Japanese A5 Wagyu "like eating the richest dessert they've ever enjoyed in steak form." It is typically enjoyed amongst friends in small quantities. 2-5oz will easily satisfy a grown man. Japanese A5 Wagyu is sliced thin (unless specifically noted in product notes) and is best cooked simply in a stainless steel or cast iron pan in its own fat. Due to the high marbling and thin cut, it cooks very quickly. Most Customers season it simply with salt, truffle salt, or salt & pepper. A5 Wagyu has an incredible flavor; season lightly to experience its organic flavor.
Australian Wagyu is characterized by a more balanced taste, texture, and heaviness than Japanese A5 Wagyu. Many Customers prefer Australian Wagyu to Japanese A5 Wagyu due to it striking a better balance and "eating more like a steak." A hungry man can comfortably consume 8-10oz of Australian Wagyu. While Japanese A5 Wagyu contains an average of 3-4 times the amount of marbling (intramuscular fat) that an American Prime Angus steak does, Australian Wagyu has 2-3x the marbling. The flavor profile of Australian Wagyu is beefier, and less buttery than Japanese A5 Wagyu. It is an absolutely delightful, balanced experience that we encourage everyone to try.
Wagyu may translate literally to "Japanese Cow" but don't for a second think that America isn't producing exceptional Wagyu these days. In true Meatery fashion, we've sourced the absolute BEST American Wagyus. Our most popular line of American-raised Wagyu is our Olive Fed line, with Rosewood Wagyu being our newest. We will continue to add additional American Wagyus to our menu as they pass our test.
